It’s late but I promised this week we’d get back into Friday Favorites so here we go! Fair warning this may seem a little longer than normal since we’re much overdue at catching up on the last month. Grab your after work/weekend cocktail and let’s jump right into it.

Much Overdue Friday Favorites: Month in Review | Cool Stuff I Loved
I went to Topp’t in New Albany to try out the new concept pizza they have; they cook your pizza the traditional way and then add cold cheese over the top to give you more of the cheese flavor. I wasn’t sold on the concept going into the trip, but the cheese flavor really IS enhanced. However, if you’re lactose intolerant-ish, this may be a little too much dairy for you, just a forewarning.
They also let us try the s’mores bars and HOLY GOODNESS, I can’t wait to go back and order these. SO. DANG. GOOD.
I bought a bath tub caddy last month and it is legit amazing. I felt kind of extra when I purchased it, but after using it just about every other day, I have zero regrets. I can take my laptop with me while I soak and catch up on email, work, etc. {I’m sure this indicates an unhealthy work-life balance but you know…}
I went to St. Louis and participated in a cool marketing opportunity that arose from my work with What Nicole Wore. Unfortunately, I can’t share a ton {confidentiality issues} but it was definitely a HUGE step outside of my comfort zone and I’m proud of myself!
Finally, I went down to Lake Cumberland State Park this week with Kentucky Tourism to cover the launch event for a new initiative their launching Monday. {I’ll be sharing ALL the deets on Monday so stay tuned!}
Much Overdue Friday Favorites: Month in Review | What I’ve Been Cooking
One of the things I’ve really wanted to dig more into this year is cooking. I’m pretty good at cooking but just don’t do it all that often. {Thanks Mom and Dad for keeping me fed.} When I got back from Saint Louis, it was like “okay Nicole, be an adult get your life together and get some HEALTHY food.” Fun fact: I love junk food and fast food. But I also like vegetables {fresh only please} and healthy-ish options. Sunday I went to the store, bought about $40 of groceries with the hope of keeping myself from eating out. I wasn’t sure if I’d be able to do it but aside from the KY Tourism event and one Panera order, I’ve stayed in to eat!
While I did just freestyle a few meals, like the salad below, I did reference a few recipes that I figured I’d show below in case you’re looking for some new options for the kitchen! {Oh and here’s the recipe box I bought so that I don’t have to keep searching my Pinterest boards!}
- Sautéed Green Beans with Garlic and Herbs // I used to think I hated green beans but I really just don’t like them frozen or from a can. This is one of my favorite ways to eat them. {For one serving, I just prepared a handful of green beans.}
- Hashbrown Casserole // This one is so quick to throw together and is easy to scoop out when you’re hungry.
- Easy Chicken Marinades // I cubed chicken breasts and then put them in separate quart size bags with some of these different marinades. While it did mean taking some time to prep, it didn’t take all that long and made my life so much easier this week. Just swap a bag from freezer to fridge in the morning and you should be able to cook up your chicken for dinner. I did teriyaki cubes over white rice one night for dinner and also used some of the cubes over a salad.
- Parmesan Ranch Brocoli // Making this is super fast and I love the way it tastes too.

There’s a pizza place near where I used to live in New York that was known for adding cold cheese. I never tried it because it seemed like overkill but this looks good!
